Restaurants got a lot of press, but local brewhouses have been hurt, too. They continued to pro- duce their specialty brews, though they have had to pivot with the changing restrictions and adapt to the new regulations. Each brewery has its own dis- tinct personality, and each has made concessions to the pandem- ic. They have closed, then opened with limited days and hours, cut staff, cut staff pay, decreased pro- duction, ramped up production, added food, changed distribution channels, dumped “old” beer, revamped protocols and moved outside, setting up tents, tables and heaters. Inside, the gleaming stainless steel tanks are now barely visible in most of the breweries. Chapman Crafted and Gunwhale Ales moved into their outdoor areas, already available. Tustin Brewery set up a tent alongside busy Newport Avenue, using a tent wall to drown out the traffic. Green Cheek, set in an industrial park off Batavia, works with its 9-to-5 neighbors, setting up tables in the parking area during the weekend. Brewery 1886, the latest to open, moved to an outside tent and sidewalk seating on closed- off Glassell Street. It is housed in a former antique store in Old Towne Orange, in a building built in 1886 – hence the name. The exotic woods brought from South America are evident in the cavernous hall, if you walk through to the inside patio, and the entryway. 1886 offers four beers, but the real draw here is the food. Chef Frank Miranda lived in New Orleans for a few years, and the influence shines, with a menu including a poutine and a shrimp po’boy. He designed the menu “for everyone,” with avocado toast and a quinoa bowl for Chapman students. There is a small kids’menu, and a dog menu is in the works. Green Cheek Beer Company, named for the wild parrots in Orange, is more about the beers and offers flights for tasting. It is known for its smooth, soft hazy offerings, including a double and a triple (DIPA, TIPA). This past year it has diversified, creating hard seltzers, including the Skinny Michelada, a lime-y bloody Mary. Hours for the patio were recently expanded from Saturday and Sunday to include Friday evenings, and a grill set up in back. With limited customer hours stifling normal production, Green Cheek began filling crowlers, 32 oz. aluminum cans, to sell in four-packs and cases, doing a brisk drive-up business in Orange and its Costa Mesa location. Closer to Chapman University, within walking distance of the Orange Plaza and train station, across from the Hilbert Museum on Cypress, is Chapman Crafted. The sprawling structure was reimagined from the four buildings originally in its place, but are now empty, as guests are on the patio. An order of food from the food truck was required for customers entering Chapman Crafted – not a problem, as it was both delicious and substantial. Wil Dee, owner of Chapman Crafted as well as Provisions and Haven Craft Kitchen+Bar, is heavily invested in the Old Towne community, and uses local vendors for produce and breads. Indeed, the logo reflects the city: the circle surrounding the "C" reflecting the Orange Circle and the star from the state flag. With restaurants and bars shut down, Crafted saw its self-distribution to four states decrease dramatically. It turned to “canning more, kegging less,” with crowlers, cans, four-packs and cases available for pick up or shipping. In addition to an expansive menu of beers, which includes brews aged in wine or whiskey barrels for added flavor notes, Chapman Crafted roasts its own coffee beans, and sells whole bean coffees. Look for a Chapman coffee/brewery soon. Gunwhale Ales, located off Orangewood in a primarily industrial area, is named for the upper edge of a ship.“Loaded to the gunwhales” is slang for “too much to drink,” loosely interpreted as overflowing and open to opportunity. The brewpub has 12 beers on tap, less than the usual pre-pandemic 20. Gunwhale used to feature a variety of food trucks, but now, as required, has a grill open on busy days. With two locations, in Orange and Costa Mesa, Gunwhale has swiveled to online sales, and ramped up canning to increase deliveries of cans and crowlers to specific areas. Tustin Brewery in Lafayette Plaza is known not only for its beers named after local streets and areas (Red Hill Red, Blimp Hangar Porter), but also its sports. To keep its sports-loving clientele happy, it pulled a big television out on the grass, under the tent. Beer flights are not available outdoors, but the brewpub is open every day, with a full food menu, table service – and beer. Chapman Crafted, 123 N. Cypress Gunwhale Ales, 1501 W.
